Lenthionin, organosirná bioaktivní látka houževnatce jedlého

     V roce 1967 publikovali japonští autoři Morita a Kobayashi nález látky z houževnatce jedlého (Lentinus edodes, syn. Lentinula edodes), známé v Japonsku pod názvem "šii-take". Tato jedlá houba původem z východní Asie je ve světě značně oblíbená pro své využití v kuchyni, hlavně v čínské (Muszyñska et al., 2017). Číňané jí říkají xiānggū (voňavá houba) nebo dōnggū (zimní houba). Dnes je již ve velkém úspěšně pěstována i mimo východní Asii a postupně se stává oblíbenou houbou i v dalších orientálních kuchyních. Převážná část houby pochází z umělé výsadby (Chang, 1999).



     Látka izolovaná Moritou a Kobayashim (1967) se vyznačovala vysokým obsahem síry (C2H4S5) a byla charakterizována jako cyklická organosirná sloučenina (1,2,3,5,6-pentathiacycloheptan, CAS Number 292-46-6) (Block a Russell, 1994). Látka byla nazvána lenthionin. Podobně jako jiné sirné sloučeniny (např. z česneku či cibule) i lenthionin charakteristicky páchne a podílí se na typické vůni houževnatce jedlého (Hiraide al., 2010). Lenthionin vzniká v houbě ze svého prekurzoru, kterým je kyselina 2-amino-5-[[1-carboxy-2 (methylsulfonyl-methylsulfinyl-methylsulfinyl-methylsulfinyl) ethyl]amino]-5-oxopentanová (kyselina lentinová) (Iwami et a., 1975). Sušený prášek houby šiitake je v japonské kuchyni používán k ochucování mnoha jídel (Shiga et al., 2004).
     Lenthionin, stejně jako některé další biologicky aktivní látky hoževnatce jedlého (lentinamycin, terpenoidy, polyfenoly, beta-glukany), jsou v poslední době studovány  pro své antibakteriální účinky (Sasaki a Takasuka, 1976; Hirasawa et al., 1999; Kim et al., 1999; Htvani, 2001; van Nevel et al., 2003) pro jejich možnost využití zejména ve veterinární a možná i humánní medicíně (Choi et al., 2006; Zhang et al., 2016; Wang et al., 2017). Extrakty této houby však vykazují také hepatoprotektivní (Akamatsu et al., 2004) nebo protinádorové účinky (Chihara et al., 1970; Yukawa et al., 2012).
